Grape varieties: Vineyards over 50 years old
Vinification:
The different varieties that make up the 50-year-old vineyard were manually harvested into 20 kg boxes. Fermentation for a week in stainless steel vats, with gentle pumping over and controlled temperature to better express their potential.
After fermentation, it had a 75-day cuvaison to gently extract all the delicate tannins from the skins and seeds. It did not age in barrels and was bottled in June 2019.
